Vegan banana and peanut butter trifle

FROM THE KITCHEN: Vegan Banana & Peanut Butter Trifle

This delicious dessert was whipped up (literally) by our chefs for a bespoke vegan wedding menu, and was just too good not to share with the world...

Ingredients

Serves 4

  • 3 ripe bananas (2 whole, 1 sliced)
  • 350g of peanut butter
  • 80g maple syrup
  • 150g plain flour
  • 20g cocoa powder
  • 200g caster sugar
  • 1tsp vanilla paste
  • 200g vegan dark chocolate (60%)
  • 240ml almond milk
  • 300ml good-quality coconut cream (place the can in the fridge overnight to chill)
  • Optional – fresh strawberries and shaved chocolate to decorate

Method

To make the vegan "custard"

  1. Add the peanut butter, 2 bananas and 50g of the maple syrup to a food processor and blend until smooth. Alternatively, you can mash the banana and combine with a hand whisk.

To make the brownie layer

  1. Pre-heat the oven to 180°C
  2. Combine the plain flour, cocoa powder and caster sugar in a bowl and set aside
  3. Next, melt the vegan chocolate slowly in a microwave or in a heatproof bowl set over (not in) a saucepan of simmering water
  4. Once the chocolate is smooth, add the almond milk and vanilla pasta and stir until well mixed
  5. Add the flour mixture to the chocolate and stir
  6. Line a brownie tray with baking paper and pour the mixture in, then place in the oven for 25 to 30 minutes.

To make the whipped cream

Note: For the coconut cream to whip properly, it’s very important for it to be cold. Place the can in the fridge the night before, and, as en extra precaution, you can also chill the bowl you will be whipping it in as well. If you can’t find coconut cream, simply purchase a can of coconut milk (don’t shake it before you open it) and skim off the thick cream at the top. The remaining liquid is great in smoothies!

  1. Add 30g of maple syrup to the cream and whip with an electric whisk until it forms peaks. Do not add water or this will make the mix too runny. Once mixed, place in the fridge to keep cool. 

Building the trifle

You can either make one large trifle and divide into four, or make them individually. 

  1. Layer slices of banana and brownie on the bottom of the bowl
  2. Next, add the banana and peanut butter “custard” mix
  3. Finally, top with the whipped coconut cream
  4. To finish, add fresh strawberries and shave a little chocolate over the top – enjoy!
